Recipe - Fish Poached en Papillote


Ingredients
  • 4 x 180g piece of boneless, skinless monkfish or snapper (or any other white fish)
  • 1 clove garlic
  • 2 anchovies
  • 1 sprig lemon thyme
  • 2 sprigs of parsley
  • 2 tbsp capers
  • 60ml extra virgin olive oil
  • 80ml white wine
  • Salt and pepper

Method
  1. Preheat oven to 180°C and place four large pieces of baking paper on top of four large pieces of foil.
  2. In a blender add the garlic, anchovies, herbs, olive oil and half the capers and blend.
  3. Place one fish per baking paper with the herb paste both under an ontop (it will work out to be around (1-2 tsp) of the herb paste per fish.
  4. Season the fish
  5. Pour 20ml of white wine over each piece of fish and drizzle with a little olive oil.
  6. Bring the two ends of the baking paper together to encase the fish, and crumple them together to seal. Tuck the other two sides underneath, then fold the foil over the fish, sealing the edges by crimping with your fingers. Repeat for the remainder.
  7. Place the parcels on a baking tray and into the oven and cook for 10-15 minutes. Removed and place on plate, tear a hole in the top and serve.
Note: In the image we did this recipe in banana leaves. It was a bit of fun. The flavour was only tweaked slightly so i'll probably stick to the in-the-bag version.

Recipe - Sundried tomato sauce




The below is what you would need for sauce for 2.

I’ve often added fresh or smoked salmon (a combination also works well!)

Ingredients
  • Extra virgin olive oil
  • 2 cloves of garlic
  • 8 ripe cherry tomatoes
  • 1/2 dried chile
  • 1/2 bunch of fresh Italian parsley
  • 2 Tbsp. sun-dried tomato paste (adjust to taste)
  • 1 glass white or rose wine
  • Spaghetti

Method

Peel and finely slice the garlic, quarter the tomatoes, chop the chile very finely slice the parsley stalks, then roughly chop the leaves and put them aside for later.

Cook the spaghetti in boiling salted water according to package instructions. 
Place a large frying pan on a high heat. Add a generous swirl of olive oil, quickly followed by the garlic, tomatoes, chile, parsley stalks and sun-dried tomato paste. When fragrant add the wine. Simmer until sauce reduces and thickens. Finish with the chopped parsley leaves and a drizzle of extra virgin olive oil.

Recipe - One Pan Roast Chicken



Ingredients

  • 6 thyme sprigs, leaves picked
  • 4 anchovies in oil, drained, chopped
  • 2 teaspoons dried oregano
  • 1 teaspoon chilli flakes
  • 2 tablespoons olive oil
  • 2 garlic cloves, chopped
  • Finely grated zest of 1 lemon
  • 8 chicken thighs (bone in, skin on)
  • 800g baby kipfler potatoes, halved lengthways
  • 100g speck or streaky bacon, cut into 5mm-thick batons
  • 250g baby truss tomatoes


Method

  1. Preheat the oven to 180C.
  2. Combine the thyme, anchovies, oregano, chilli, oil, garlic and lemon zest in a bowl (could even use a food processor). Add the chicken and turn to coat. 
  3. Parboil the potatoes
  4. Add the potatoes and toss to combine. Place on a large baking tray and scatter over the speck.
  5. Cut the zested lemon into wedges and add to the tray. Season and roast for 40 minutes or until chicken is golden and potatoes tender. Remove from the oven and top with tomatoes. Cover with foil. Roast for a further 10-15 minutes or until tomatoes are cooked through.
  6. Squeeze over roasted lemon juice to serve.

Recipe - Zucchini And Haloumi Fritters



Ingredients
  • 5 zucchini (650g), coarsely grated
  • 100g smoked ham, torn into thin pieces
  • 250g haloumi, coarsely grated
  • 2/3 cup (100g) self-raising flour
  • 1/3 cup (50g) plain flour
  • 2 eggs, lightly beaten
  • 1/2 cup chopped dill
  • Pinch of dried chilli flakes, plus extra to serve
  • 1 tbs extra virgin olive oil, plus extra to shallow-fry
  • 1 bunch radishes, very thinly sliced
  • 1 cup (180g) podded broad beans, blanched, refreshed, skins removed
  • 200g snow pea shoots
  • Green goddess dressing
  • 1/2 bunch each mint, dill, parsley and tarragon, leaves picked
  • Juice of 1/2 a lemon
  • 1/2 cup (120g) sour cream
  • 1/2 cup (140g) thick Greek-style yoghurt

Method

  1. Place zucchini in a colander set over a bowl and stir through 1 tsp salt. Set aside for 15 minutes, then squeeze to remove excess liquid. Combine with ham, haloumi, flours, egg, dill and chilli in a bowl. Heat 5mm oil in a large non-stick frypan over medium heat. In batches, spoon 1/4 cup zucchini mixture per fritter into pan. Flatten slightly with a spatula. Cook for 3-4 minutes each side until golden, then drain on paper towel. Keep warm. Repeat with remaining mixture
  2. For the dressing, place all ingredients in a food processor, season, and whiz until smooth.
  3. Toss radish, broad beans, pea shoots and remaining 1 tbs olive oil in a bowl. Serve fritters hot with dressing and salad.

Recipe - Prosciutto Chicken in Mushroom Sauce



I enjoyed fiddling with flavours to make this and would make it for a dinner party!

Ingredients

For the chicken
  • 80g Panko bread crumbs
  • 40g baby spinach
  • 40g cheese (I used Parmesan but could use other or a mix)
  • 2 cloves garlic
  • 4 chicken breasts
  • 8 slices of prosciutto
  • 1 tbsp. olive oil

For the Mushroom Sauce
  • 50g dried mushrooms
  • 500ml chicken stock
  • 1 tbsp. butter
  • 1 onion, peeled and finely sliced
  • 100g mixed fresh mushrooms, sliced
  • 1 garlic clove, peeled and finely chopped
  • 100ml white wine
  • 125ml single cream
  • Sea salt and ground black pepper
  • Small handful of flat-leaf parsley, to garnish.

Method

Preheat the oven to 180°C

For the mushroom sauce
  • Soak the dried mushrooms in a bowl with the chicken stock.
  • For the stuffed chicken
  • Blitz in the food processor: crumbs, spinach, cheese, garlic and season with salt and pepper

To stuff the chicken
  • Lay the chicken breasts on a chopping board and, using a sharp knife, slice horizontally to create a pocket. Stuff each pocket with the mix.
  • Wrap two slices of prosciutto around each chicken breast.
  • Heat the oil in a large frying pan over a high heat. Add the chicken breasts and fry all over until they are crisp and golden. 
  • Transfer the breasts to a roasting tin and cook on the middle shelf in the oven for about 20 minutes until the prosciutto is crispy and the chicken is cooked through.

Back to the mushroom sauce
  • Add the butter to the pan and place it back on a medium heat.
  • Fry the onion and fresh mushrooms until tender.
  • Add the garlic and fry for another 2 minutes.
  • Remove the mushrooms from the stock, keeping the stock and slice the mushrooms
  • Pour in the soaked dried mushrooms together with the chicken stock and add the white wine.
  • Bring the sauce to the boil, then reduce the heat and simmer for 2–3 minutes until slightly thickened. 
  • Remove the pan from the heat and stir in the cream. 
  • Season with sea salt and ground black pepper to taste.

To finish
  • Remove the chicken from the oven as sprinkle over the rest of the bread crumb mixture and return to the oven for 5 minutes until golden brown.
  • Sprinkle the cooked chicken breast with parsley and serve with the mushroom sauce and some rice, pasta or salad leaves

Recipe - My Potato Salad

I created this recipe using my favourite flavours. All the quantities can be adjusted so you can add more of your favourite tastes and/or omit the ingredients you’re not into. I really don't like creamy or mayo-y potato salads so have only added a tiny bit of mayo. You can totally skip it though if you're like me and don't always feel like mayo.




Ingredients
  • 1 tbsp. olive oil
  • 1 chorizo (130g), diced
  • 8 potatoes, peeled and chopped
  • Shallots,
  • diced
  • ¾ cup peas, cooked
  • 2 tbsp. mayo (optional)
  • 12 Mint leaves, shredded
  • 80g Fetta, cubed


Method
  1. Fry the chorizo in the olive oil and when cooked set aside
  2. Boil the potatoes and when cooked add them to your salad bowl
  3. Add the chorizo, reserving the oil
  4. Fry the shallots in the reserved oil then add the shallots and oil, and peas to the potato.
  5. Mix the ingredients together
  6. When cooled add the mayo, mint and fetta

Recipe - Silvia Colloca’s Panpepato (Chocolate Italian Christmas cake similar to panforte)



INGREDIENTS
  • 2/3 cup (100g) whole blanched almonds
  • 2/3 cup (100g) roasted hazelnuts, skins removed
  • 2 cups semi-dried figs, coarsely chopped
  • 1/3 cup (55g) mixed peel
  • 1 cup (150g) plain flour
  • 2 tbs Dutch cocoa powder
  • 2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/4 tsp freshly grated nutmeg
  • 1 cup (350g) honey
  • 80g dark chocolate, chopped
  • 1/4 cup (60g) caster sugar

METHOD
  1. Preheat oven to 170°C. Grease and line a 20cm x 30cm lamington pan with baking paper. Place almonds, hazelnuts, figs and peel in a large bowl. In a separate bowl, sift the flour, cocoa, spices and 1/4 teaspoon freshly ground black pepper. Stir to combine.
  2. Place honey, chocolate and sugar in a saucepan over medium heat. Bring to the boil, then reduce heat to low. Simmer, without stirring, for 2 minutes or until mixture reaches 116°C on a kitchen thermometer. Pour over nut mixture and stir to form a dark, sticky paste (if mixture doesn’t come together, add 1 tablespoon extra honey). Using a spoon, press evenly into lined pan.
  3. Bake for 30–35 minutes until just set. Cool slightly, then turn out onto a wire rack to cool completely. Cut into slices. Store in an airtight container at room temperature for up to 4 weeks.


Recipe - Couscous with apricots, sultanas and toasted pine nuts


Ingredients: 

  • 1 1/2 c. dry couscous
  • 1 1/2 c. boiling water
  • 3 tbsps. extra virgin olive oil
  • 12 apricots, cut into small cubes
  • 1/3 c. sultanas
  • 1/4 c. pine nuts, toasted
  • 2 tbsps. chopped parsley
  • 1 1/2 tbsp. lemon juice
  • 2 tsps. ground coriander seeds
  • 2 tsps. salt
  • 1 tsp. sugar
  • 1/4 tsp. black pepper 

Method: 
  • Put the cous cous in a mixing bowl. Pour the boiling water, add the olive oil and give it a stir. Cover with cling film and leave for  about five minutes. It is ready when the grains have absorbed all the liquid and the grains have plumped up. Fluff up with a fork. Add all the ingredients and stir. It is now ready to serve.

Recipe - Tuna in orange-soy marinade



  1. Marinade tuna for 30 mins: ¼ cup juice from oranges, ¼ cup soy, 1 tbsp sweetener (I used maple syrup), 1 tbsp sesame oil.
  2. Remove tuna
  3. Transfer marinade sauce to a saucepan and simmer to make a finishing sauce
  4. Coat tuna in sesame seeds, cook
  5. Serve and enjoy

Recipe - Apple & cranberry sauce


Ingredients
  • 500 g cranberries , fresh cranberries or frozen ones, thawed
  • 2 bramley apples , peeled, cored and cut into chunks
  • 150 g golden caster sugar
  • 1 stick cinnamon

Method
  • Place all the ingredients in a wide saucepan and add a splash of water. Put the pan on the heat and bring to the boil. Simmer gently until the cranberries have burst and the apple has softened. Boil down until the mixture thickens slightly, then take off the heat and leave to cool.
  • If giving as a gift, divide between air-tight sterilised jars (see the how to video below) and give out to all your friends. Once opened, store in the fridge.

Recipe - Pokémon Ice-cream Dessert



You will need
  • Round shaped crockery (bowl, cup etc.)
  • Red food colouring
  • Vanilla ice-cream
  • KitKat (or similar shape)
  • Chocolate button
  • White marshmallow
  • honey

Method
  • Soften the needed quantity of vanilla ice-cream, add red food colouring until you’re happy with the colour and blend through thoroughly (I used a hand mix)
  • Pour into the bowl and allow to set
  • When set, cut out half and replace with vanilla (to get the 2-tone effect), and allow to set
  • When almost set nuzzle in the KitKat (or whichever you’re using for the axis)
  • Just before serving add the chocolate button using honey to adhere it
  • Add the marshmallow, also using honey to adhere it
  • Serve immediately

Tip:
  • Start the creation before the day it’s needed

Recipe - Smoked salmon and camembert quiche


Ingredients
  • Short crust pastry
  • 185ml (3/4 cup) pouring cream
  • 3 eggs
  • 2 tablespoons chopped fresh dill
  • 100g sliced smoked salmon
  • 100g chilled camembert, thinly sliced
  • Mixed salad leaves, to serve

Method
  1. Roll out the pastry between 2 sheets of non-stick baking paper to a 28cm disc. Line a 22cm (base measurement) fluted tart tin, with removable base, with the pastry and trim any excess. Use a fork to lightly prick the base all over.
  2. Preheat oven to 190°C. Place the tart tin on a baking tray. Cover the pastry base with baking paper and fill with pastry weights or rice. Bake in oven for 15 minutes. Remove the paper and pastry weights or rice. Bake for a further 8 minutes or until golden. Remove from oven and reduce oven temperature to 180°C.
  3. Whisk together the cream, eggs and dill in a large jug. Season with salt and pepper.
  4. Arrange the smoked salmon and camembert evenly over the base of the quiche. Carefully pour the egg mixture into the quiche shell. Bake in oven for 35-40 minutes or until the filling is golden and just set in the centre. (To freeze, see note.)
  5. Cut the quiche into wedges and serve with mixed salad leaves.


Recipe - Fresh And Smoked Salmon Tartare With Dill And Capers



Ingredients
  • 450g sashimi-grade salmon, cut into 1cm pieces (option to cook them - image has cooked)
  • 250g smoked salmon, finely chopped
  • 1/3 cup (80ml) lime juice (from 2 limes)
  • 2 eschalots, finely chopped
  • 2 tablespoons olive oil
  • 1/4 cup chopped dill
  • 1/4 cup (50g) salted capers, rinsed, drained, finely chopped
  • 1 tablespoon Dijon mustard
  • 1 tablespoon wholegrain mustard
  • Toasted sourdough bread and watercress (optional), to serve


Method
  1. Combine all salmon, lime juice, eschalot, oil, dill, capers and mustards. Season, then cover and chill for 15 minutes.
  2. Serve with buttered sourdough toasts, pasta or a number of other options

Whenever I need to make a quick and tasty pasta, this is my go-to!

Simply has garlic, cherry tomatoes, basil, parsley, lemon juice and toasted bread crumbs.

Recipe - Easy Fetta Pea Dip



Method
  • Add 1 cup cooked frozen peas to a food processor and blitz to puree
  • Add the following extra ingredients:
    • Small handful of mint (or dill)
    • Block Danish feta
    • Small amount of salt
    • Splash of lemon juice
    • Splash of olive oil
  • Blitz again
  • Serve with crackers


Recipe - Anchovy butter


Combine in a food processor:
  • 250g unsalted butter, softened
  • 1 tbs olive oil
  • 2 garlic cloves, finely grated
  • 3 anchovies in oil, drained, plus 1 tbs oil
  • 2 tsp Dijon mustard
  • 2 tbs baby capers, rinsed, drained
  • 1/4 cup chopped basil leaves
  • Juice of 1/2 lemon


Recipe - Bliss Balls



Ingredients
  • 24 fresh dates, pitted
  • ½ cup (80g) almonds
  • 1 tablespoon rice malt syrup
  • 1 tablespoon coconut oil, melted
  • 2 tablespoons raw cacao powder
  • Pinch sea salt flakes
  • ¼ cup (20g) lsa
  • ¼ cup (20g) desiccated coconut, toasted


Method
  • Place the dates, almonds, rice malt syrup, oil, cacao and salt in a food processor. Process for 2–3 minutes or until the nuts are finely chopped and the mixture comes together.
  • Roll 2 teaspoons of the mixture into balls.
  • Roll half the balls in LSA and the other half in the desiccated coconut. Refrigerate until ready to serve.

Recipe - Chimichurri Sauce



 Ingredients:
  • 1/2 cup (125ml) olive oil, plus extra to brush
  • 1/4 cup (60ml) red wine vinegar
  • 1/3 cup chopped flat-leaf parsley leaves
  • 1 bunch fresh oregano, leaves chopped
  • 1/2 teaspoon dried crushed chillies
  • 1 garlic clove, crushed

Method: 
  • Simply put all ingredients into a food processor and whiz!

Recipe - Rocky Road


Serving size: Serves 8 or more
Cooking time: Less than 15 minutes

INGREDIENTS
  • 400g Dark Chocolate
  • 200g Milk Chocolate
  • 3 large pieces Turkish delight chopped into small pieces
  • 1 Cherry Ripe bars, chopped
  • ½ bag marshmallows
  • 1 scoop unsalted nuts of your choice (pistachio, roasted peanuts etc.)

METHOD
  1. Line a tray with baking paper.
  2. Combine and melt chocolate on low heat until smooth and runny.
  3. Mix cherry ripe, Turkish delight, marshmallows and nuts into large bowl.
  4. Once chocolate has melted, mix quickly with other ingredients.
  5. Pour into prepared tray and place into fridge for approximately 20 minutes or until almost set.
  6. Remove from fridge and cut into desired pieces then return to fridge to set.



Tip - Use Callebaut chocolate - it really is the best

Recipe - Warm Vegetable Salad




Ingredients
  • 3 cups chopped vegetables of your choice – I used cauliflower, potato and pumpkin
  • 1 Chickpeas, canned
  • ½ red onion, sliced
  • 1 Garlic clove, crushed
  • 1 lemons
  • 1 Flat-leaf parsley and mint
  • 1 Spring onions
  • Olive oil, extra-virgin
  • 1 tbsp. Sherry vinegar
  • Feta, diced

Method
  • Preheat oven to 180C. 
  • Spread vegetables, chickpeas, red onion & garlic on a large oven tray
  • Sprinkle over half of the lemon’s rind
  • Squeeze over all of the lemon’s juice
  • Lightly drizzle olive oil over vegetables
  • Season to taste Use hands to ensure all ingredients are mixed well
  • Roast until golden and tender
  • Combine parsley, mint, spring onion, sherry vinegar and mix through the vegetables
  • Option to squeeze over additional lemon juice and/or olive oil
  • Add feta
  • Serve warm.

Recipe - Classic Bean Salad


Ingredients
  • 400g can mixed beans, rinsed, drained
  • 400g can cannellini or butter beans, rinsed, drained
  • 3 celery stalks, halved lengthways, thinly sliced
  • 1/2 cup chopped flat-leaf parsley leaves
  • 1/2 red onion, finely chopped
  • 1 tablespoon red wine vinegar
  • 1 1/2 tablespoons olive oil


Method 
  • Combine all ingredients Season with salt and pepper, then set aside.

Recipe - Coconut And Pepita Chocolate Rounds



Ingredients
  • 400g dark (70%) chocolate, chopped
  • 1 cup (90g) desiccated coconut
  • 1 tbs coconut oil
  • 1/2 cup (75g) pumpkin seeds (pepitas), plus extra to garnish
  • 1/2 cup (80g) sunflower seeds, plus extra to garnish
  • 1/2 cup (75g) dried currants
  • Sea salt flakes, to garnish


Method

  1. Place chocolate in a heatproof bowl set over a saucepan of gently simmering water (don’t let bowl touch water) and stir occasionally until melted. Add remaining ingredients except salt and stir to combine. Set aside for 2 minutes to set slightly, then stir again. The mixture should be textured and rough; add more coconut for a chunkier consistency if needed.
  2. Place tablespoons of chocolate mixture on 2 baking paper-lined baking trays and shape into rough 4cm rounds with the back of a spoon. Sprinkle over the sea salt and extra pumpkin and sunflower seeds, then chill for 1 hour or until firm.

Recipe - Olive Oil Lemon Drizzle Cake


Ingredients
  • 21/2 cups (375g) self-raising flour, sifted
  • 11/2 cups (330g) caster sugar
  • Finely grated zest and juice of 1 lemon
  • 3 eggs
  • 1/2 cup (125ml) buttermilk
  • 1/3 cup (80ml) extra virgin olive oil
  • 1 vanilla bean, split, seeds scraped
  • Lemon thyme sprigs (optional), to serve
  • Lemon Glaze
  • 1 cup (150g) pure icing sugar, sifted
  • Juice of 1 lemon


Method

  1. Preheat the oven to 180°C. Grease and line a 20cm springform cake pan with baking paper.
  2. Combine flour, sugar and lemon zest in a bowl and set aside. Place eggs in a food processor, then, with the motor running, gradually add buttermilk, oil, vanilla seeds and lemon juice, whizzing until smooth.
  3. Add the dry ingredients and pulse until just combined. Pour batter into pan and bake for 45 minutes or until golden and a skewer inserted into the centre comes out clean.
  4. Allow to cool in pan, then transfer to a wire rack to cool completely. For lemon glaze, place icing sugar in a bowl and gradually stir through enough lemon juice until a smooth, runny icing.
  5. Drizzle glaze over the cake and top with lemon thyme, if using, to serve.

Recipe - Banana Fritters



Ingredients
  • 2 very ripe large bananas
  • 2 eggs
  • 115 g Plain flour
  • 1 tsp baking powder
  • Pinch baking soda
  • Pinch salt
  • 60g sugar
  • 1/2 teaspoon cinnamon 
  • 50g coconut yogurt
  • 1 tsp vanilla extract
  • Frying oil
  • Icing sugar (optional)

Method:
  • Peel the bananas, cut into 3-4 cm pieces
  • Mix eggs thoroughly
  • Sift the flour with the baking powder, baking soda, salt, cinnamon (optional)
  • Add the eggs to the dry ingredients
  • Add the yogurt and mix to combine. 
  • Add the sugar, cinnamon and vanilla and mix again
  • In a saucepan or deep fryer, heat the oil
  • Coat the banana pieces in the batter
  • Cook each until they are golden
  • Serve slightly cooled down, and if you like, sprinkled with icing sugar.

Recipe - Chicken marylands in coconut milk


This is just too easy!

Ingredients
  • 4 chicken marylands
  • 2 400g cans coconut milk
  • 2 long red chillies, finely sliced
  • 1 roughly chopped stem of lemongrass
  • 6 to 8 cloves garlic, peeled and smashed
  • 4 tablespoons fish sauce
  • 40 g palm sugar
  • juice of 2 limes
  • 4 cm ginger peeled and quartered
  • Sea salt and freshly ground black pepper
  • To serve: coriander and lime wedges

Method
  • In a baking tray, throw all ingredients in except the chicken and give it a quick stir. Place the chicken marylands in skin side up. Cook on 180 till cooked. Serve with coriander, lime and rice

Recipe - Spinach and golden raisin dip

How good is this sauce with ANY meat as an accompaniment?! Anything you'd add tzatziki to, try this. No reason it couldn't be a stand-alone dip actually!!!



Served 2 as a meat accompaniment

Ingredients
  • 2 tbs golden raisins, roughly chopped, plus extra to serve
  • 1 tbs olive oil
  • 2 eschalots, finely chopped
  • 1/4 tsp ground turmeric
  • Pinch of saffron threads (omit if you don't have any)
  • 160g thick natural yoghurt
  • 60g English spinach leaves, blanched, finely chopped
  • 1 tsp lemon juice
Method
  1. Soak the golden raisins in warm water for 15 minutes, then drain and set aside.
  2. Heat the oil in a heavy-based frypan over medium heat. Add the eschalots and cook, stirring, for 3-4 minutes until soft and translucent. Stir in the turmeric, saffron and golden raisins, and cook for a further 2-3 minutes until fragrant. Season. Remove from the heat and set aside to cool.
  3. Transfer to a bowl with the yoghurt, spinach and lemon juice, and stir to combine. Season to taste, then top with extra golden raisins.

Recipe - Raw Raspberry (or Cherry) Slice





Ingredients
  • 1/2 cup (50g) raw cacao powder
  • 1/4 cup (60ml) melted coconut oil, cooled
  • 12 medjool dates, pitted
  • 2 cups (300g) raw cashews
Filling
  • 2/3 cup (50g) shredded coconut
  • 3/4 cup (190ml) pure maple syrup (I cant stress enough the importance of pure vs flavoured syrup)
  • 400g fresh or frozen raspberries (or cherries), thawed

METHOD

  1. Line a 20cm square baking pan with enough baking paper to overlap two sides of the pan.
  2. To make the base, place the cacao, oil, dates and 1 cup (150g) cashews in a high-speed blender and whiz to a coarse paste. Spread evenly into the prepared pan, then transfer to the freezer to firm up.
  3. For the filling, place the coconut, maple syrup, raspberries and remaining 1 cup (150g) cashews in a clean high-speed blender and whiz to a smooth paste. Spread the mixture evenly over the chilled base, then return to the freezer to firm up.
  4. Once set, remove the pan from the freezer, then, using the baking paper, lift the slice out of the pan. Using a hot knife, cut into 18 bars to serve. Keep frozen or refrigerated until ready to serve.

Recipe - Lentil and Eggplant Ragu



Preparation time:10 minutes 
Cooking time: 6 hours 20 minutes 
Serves: 6 

Ingredients:
  • 2 tbsp extra virgin olive oil
  • 1 brown onion, finally chopped
  • 2 cloves garlic, minced
  • 2 sticks celery, finely chopped
  • 1 carrot, sliced into 1 centimetre thick rounds
  • 1 eggplant, diced into 1 centimetre cubes
  • 1 cup red wine
  • 1/2 cup tomato paste
  • 750 ml vegetable stock
  • 375g pack whole green lentils, rinsed
  • 400 g can chopped tomatoes
  • 6 basil leaves, torn, plus extra to serve
  • 1 fresh bay leaves
  • 1 tbsp balsamic vinegar
  • 1tbsp brown sugar
  • Sea salt flakes and fresh ground black pepper to season
  • Cooked penne to serve
  • Shaved parmesan to serve

Method:
  1. Heat oil in a large frying pan over a high heat.
  2. Add onions, garlic, celery and carrot and cook, stirring occasionally, for 5 minutes or until lightly browned.
  3. Add eggplant and cook for a further 5 minutes or until eggplant has softened slightly.
  4. Stir in wine and tomato paste, then bring to the boil cook for 5 minutes or until wine has reduced by half Transfer mixture to the bowl of a 5L slow cooker and place in appliance.
  5. Stir in 2 cups of water, stock, lentils, tomatoes, herbs, half of the vinegar and half of the sugar.
  6. Cover with a lid and cook on low setting for 6 hrs stir in remaining vinegar and remaining sugar.
  7. Season. Serve lentil and eggplant with cooked penne.
  8. Scatter over shaved parmesan and extra basil leaves

Recipe - Slow Cooker Mild Malaysian Chicken Curry



Ingredients
  • 2 brown onions, cut into thick wedges  
  • 2 garlic cloves, crushed  
  • 1 tbs finely grated ginger  
  • 1 stem lemongrass, pale section only, finely chopped  
  • 2 tsp ground turmeric  
  • 1 tsp ground cumin  
  • ½ tsp chilli powder  
  • ½ tsp ground cardamom  
  • 3 whole star anise  
  • 2 cinnamon sticks or quills  
  • 8  Chicken Thigh Fillets, halved  
  • 400g can coconut milk  
  • 1 tbs brown sugar  
  • 1 tbs fish sauce 
  • Thinly sliced red chilli, to serve  
  • Coriander leaves, to serve 
  • Lime wedges, to serve  


Method
  1. Place the onion, garlic, ginger, lemongrass, turmeric, cumin, chilli powder, cardamom, star anise and cinnamon in a slow cooker. Place the chicken over the onion mixture. Pour over the coconut milk.
  2. Cover and cook for 3-4 hours on high (or 6-7 hours on low) or until chicken is tender and sauce thickens slightly. Add the sugar and fish sauce. Stir to combine. Taste and season.
  3. Sprinkle the curry with chilli and coriander. Serve with lime wedges

Recipe - Sausage And Red Wine Pasta

 
Ingredients
  • 20ml (1tbs) olive oil
  • 400g Italian-style pork sausages
  • 200ml dry red wine
  • 2 tbs tomato paste
  • 400g can diced tomatoes (or 400ml tomato passata)
  • 1 tsp sugar
  • 400g short pasta (such as cavatappi, fusilli or penne)
  • 1 tbs fresh flat-leaf parsley or thyme leaves
  • 2 tbs freshly grated parmesan


Method
  1. Heat olive oil in a heavy-based frypan. Skin the sausages and pinch meat into the pan. Brown the meat well, breaking it up with a wooden spoon. Add the wine and allow it to bubble and reduce in volume by half , stirring well.
  2. Add the tomato paste, diced tomatoes (or passata) and sugar. Add a pinch of sea salt and pepper and bring to the boil. Reduce heat to low and simmer for 20 minutes, stirring occasionally.
  3. Cook pasta in plenty of boiling, salted water until tender but still firm to the bite (al dente). Drain, reserving a cupful of the cooking water. Toss the drained pasta in the sauce over medium heat, adding some cooking water, if necessary, to keep it saucy.
  4. Serve the pasta on hot plates and scatter with the fresh parsley or thyme and grated parmesan, if desired.

Recipe - Persian Love Cake

It’s still Bryan’s Birthday!!!



Ingredients
  • 360 gm (3 cups) almond meal
  • 145 gm (2/3 cup) raw sugar
  • 145 gm (2/3 cup) brown sugar
  • 120 gm unsalted butter, softened
  • 2 eggs, lightly beaten
  • 250 gm Greek-style yoghurt, plus extra to serve
  • 1 tbsp freshly grated nutmeg
  • 85 gm (1/2 cup) pistachios, coarsely chopped


Method
  1. Preheat oven to 180C. Combine almond meal, sugars, butter and 1 tsp salt in a bowl, then rub with fingertips until coarse crumbs form. Spoon half the mixture into a lightly buttered and baking paper-lined 26cm-diameter springform pan, gently pressing to evenly cover base.
  2. Add egg, yoghurt and nutmeg to remaining crumble mixture and beat with a wooden spoon until smooth and creamy. Pour over prepared base, smooth top, scatter pistachios around edge and bake until golden (30-35 minutes.) Cool completely in pan on a wire rack to room temperature, then serve with extra yoghurt. The cake will keep in an airtight container for up to a week.

Recipe - Donna Hay's Pistachio, Raspberry And Ricotta Layer Cake



Ingredients
  • 225g Unsalted Butter, Softened
  • 1½ Cups (330g) Caster (Superfine) Sugar
  • 2 Teaspoons Vanilla Extract
  • 6 Eggs
  • 2¼ Cups (335g) Self-Raising (Self-Rising) Flour, Sifted
  • 2¼ Cups (270g) Almond Meal (Ground Almonds)
  • ¾ Cup (180ml) Milk
  • 1 Cup (125g) Fresh Raspberries
  • ½ Cup (70g) Slivered Pistachios
  • Ricotta Icing
  • 3 Cups (720g) Fresh Ricotta
  • ¾ Cup (120g) Icing (Confectioner’s) Sugar
  • 1 Teaspoon Vanilla Extract

Method
  1. Preheat oven to 160°C (325°F). Place the butter, caster sugar and vanilla in the bowl of an electric mixer and beat for 5–6 minutes or until pale and creamy. Scrape down the sides of the bowl and add the eggs, one at a time, beating well after each addition. Add the flour, almond meal and milk, and beat on low speed until just combined. Spoon the mixture into a lightly greased, 10cm deep, 20cm round cake tin, lined with non-stick baking paper. Cook for 1 hour 20 minutes–1 hour 25 minutes or until cooked when tested with a skewer. Allow to cool in the tin for 15 minutes before turning out onto a wire rack to cool completely.
  2. To make the ricotta icing, place the ricotta, icing sugar and vanilla in a food processor and process until smooth. Refrigerate for 20 minutes or until lightly firm.
  3. To assemble, trim the top of the cake and discard. Slice into 3 layers horizontally. Using an 18cm round plate as a guide, use a small knife to trim the edges of the cake and discard.
  4. Place the raspberries in a small bowl and lightly crush with a fork. Add 1 cup of the ricotta icing and mix gently to combine. Place ⅓ cup of the pistachios into a small bowl, add 1 cup of the ricotta icing and mix to combine. Place the bottom layer of the cake on a cake stand and spread with the pistachio ricotta icing. Top with a layer of cake and spread with the raspberry ricotta icing. Top with the remaining layer of cake and spread over the remaining ricotta icing. Sprinkle with the remaining pistachios to serve. Serves 8–10.

Recipe - Spanikopita (Greek Spinach Pie)

This recipe is straight from the village, so it doesn't get any more authentic that this. Except, if you do what I today, and don't use filo but make it traditional pie style instead. Sorry to all the giagias out there :/



Ingredients:
  • 2 bunches english spinach
  • 1 bunch shallots
  • 1 bunch dill
  • 1 leek
  • 300g fetta
  • Poppy seeds
  • ¼ cup parmesan cheese
  • 3 eggs
  • Salt
  • ½ teaspoon grated nutmeg
  • 1 tsp white pepper
  • Olive oil
  • filo pastry


Method
  1. Pre-heat oven on high
  2. Wash spinach and shallots and leek
  3. Finely chop spinach and place in a large bowl (or sink) and sprinkle with 1 teaspoon of salt
  4. Generously coat the bottom of a large pot with olive oil and heat to medium
  5. Add chopped shallots and leek and allow to saute
  6. Add dill
  7. Stir to mix ingredients for 5 minutes
  8. Take off stove and allow to cool (5 minutes)
  9. Add spinach (ensure you squeee all excess water out)
  10. Add crumbled fetta
  11. Add almost the same quantity of parmesan cheese
  12. Stir thoroughly to combine all ingredients
  13. Add 3 eggs and stir
  14. Add grated nutmeg and white epper and stir
  15. Coat base of baking tray with a drile of olive oil then use pastry brush (if you have one … not essential) to distribute
  16. Brush 2 sets of filo with oil and coat the bottom
  17. Pour in the mixture
  18. Cover with six sheets of filo (following the same pattern as the base)
  19. Sprinkle with poppy seeds
  20. Put in oven reducing the heat to just under 200 degrees

This will take approx an hour to cook, keep checking it and if the top is browning too quickly, cover with aluminium foil

Recipe – Easy, Healthy Ice cream alternate


On this occasion my ingredients were yogurt, raspberry, honey and just a couple of maltesers



The basic rules are:
  1. For however many grams of yoghurt you use (which will probably be 300g or 500g) use the same amount of grams in frozen fruit.
  2. Make sure the fruit is frozen otherwise it will negatively affect the texture and density.
  3. Add 2 – 3 tbsp. of something sweet to counter the yogurt
  4. Optional: Add something slightly sinful or a something garnishy e.g. mint
Method:
  • Place all ingredients in food processor, mix until it’s at the consistency you like (I like chunks) then freeze

Recipe - Partially healthy Banana and rolled oat muffins

Ingredients
  • 2 cups (260g) wholemeal self-raising flour
  •  1 teaspoon ground cinnamon
  •  1/2 teaspoon bicarbonate of soda
  •  1 cup (100g) rolled oats
  •  1/2 cup (100g) brown sugar
  •  2 eggs
  •  3/4 cup (185g) plain low-fat yoghurt
  •  1/4 cup (60ml) canola oil
  •  2 bananas, mashed (250g)

Method
  1. Preheat oven to 200°C. Line a 12 cup muffin pan with paper cases.
  2. Sift flour, cinnamon and soda into a bowl. Empty the flour husks from the sifter back into the bowl along with the oats and brown sugar, and stir to combine.
  3. Whisk eggs, yoghurt and oil together. Add banana and stir to combine. Pour into dry ingredients and mix together using a wooden spoon until just combined. Mixture may be lumpy and does not have to be evenly mixed.
  4. Spoon mixture into paper cases. Bake for 20 minutes or until golden and cooked through. Cool for 5 minutes before transferring to a wire rack to cool completely.

Recipe - Pear & Raspberry Cake



Ingredients
  • 3 ripe pears
  • 20g butter
  • 4 star anise
  • 4 whole cloves
  • Maple syrup or brown sugar
  • 170 g caster sugar
  • 230 ml milk
  • Finely grated zest of 1 lemon
  • 1 tsp vanilla
  • 100 ml extra virgin olive oil
  • 3 tsp Sambuca (optional; see Note)
  • 2 eggs, lightly beaten
  • 1⅓ cups (200 g) plain flour 
  • ½ tsp bicarbonate of soda
  • Punnet raspberries

Method
  1. Preheat oven to 180C
  2. Peel 3 pears, chop and map out how you plan to present them in your round or square cake tin so you know if you have enough
  3. Add to baking tray: 20g butter along with the pears, star anise, cloves and a light drizzle or either maple syrup or brown sugar. Bake until pears just cooked through, shaking tray occasionally so the butter and spices touch all the pears to infuse at some stage
  4. Add to saucepan: the sugar, milk and lemon zest. Cook over low heat and cook for 3–4 minutes, stirring regularly, until the sugar has dissolved. Do not let the milk come to the boil. Turn off the heat and stir in the vanilla, olive oil and liqueur (if using), then let the mixture cool for 5–10 minutes.
  5. In a mixing bowl: add the beaten egg, flour and bicarbonate of soda and whisk to form a smooth batter. It's normal for the batter to be on the runny side.
  6. Add pears and raspberries to the batter
  7. Pour the batter over the top
  8. Bake for 30–35 minutes or until pale golden and a skewer inserted into the middle of the cake comes out clean.
  9. Cool in the tin for a few minutes, then turn out onto a wire rack and cool at room temperature for 1 hour before cutting.
  10. Serve just as it is.
Note
  • For an alcohol-free version, replace the liqueur with milk.
  • Next time might do the pears on the stove top to caramelise them. The cake was delicious, just may have looked prettier with the pears caramelized.
