Off memory I saw this salad on Huey's Cooking? And, I love love LOVE it!!!!

Salad

-    Baby spinach leaves

-    Whole cucumber

-    Mint leaves

-    Toasted pine nuts

-    Shaved Parmesan

-    Squeeze over half a lemon

Dressing

-    3 tbsp olive oil

-    1 tbsp balsamic vinegar

-    5-6 sun dried tomatoes
