Ingredients
- 6 large potatoes, cut into chunks
- 1 1⁄2 tablespoons finely minced garlic
- 1 teaspoon salt
- 1 tablespoon red wine vinegar
- 1 1⁄2 lemons, juice of
- 3⁄4 cup olive oil
- 1⁄2 cup mint
- 1/2 cup parsley
Method
- Boil the potatoes
- Immediately drain potatoes of any liquid
- Add all the ingredients, except herbs and stir, carefully,
- When the salad has cooled a bit, add the herbs.
- Serve warm or at room temperature
