Ingredients
- 400g spaghetti
- 120g unsalted butter, chopped
- 4 cloves garlic, crushed
- 400g of a variety of mushrooms
- 6 sprigs thyme
- ½ bunch chopped parsley (or to taste)
- 4 tbsp panko bread crumbs, lightly toasted
- sea salt and cracked black pepper
- Parmesan cheese
METHOD
- Cook the pasta in a saucepan of salted boiling water and keep warm
- While the pasta is cooking, heat a large frying pan over high heat. Add the butter and garlic and cook for 1 minute
- Add the mushroom, thyme, salt and pepper, and cook until just tender.
- Stir through the parsley and bread crumbs
- Divide the pasta between bowls. Top with the sauce, and sprinkle with pepper to serve.
- Serves 4.
